Chicken Paprikash (Paprikas Csirke)

INGREDIENTS

1 onion, chopped
4 tablespoons shortening
1 tablespoon paprika
1 teaspoon black pepper
2 tablespoons salt
4 to 5 pound chicken, separated
1½ cups water
½ pint soup cream

PREPARATION

  1. Brown onion in shortening; add seasonings and chicken; brown 10 minutes.
  2. Add water; cover and let simmer slowly until tender.
  3. Remove chicken; add sour cream to drippings in pan and mix well.
  4. Add dumplings; arrange chicken on top.
  5. Heat through and serve.
  6. For more gravy, add ½ pint sweet cream to sour cream.

Serves 4-6.

Dumplings (Galuska)

INGREDIENTS

3 eggs, beaten
3 cups flour
1 tablespoon salt
½ cup water

PREPARATION

  1. Mix all ingredients together and beat with a spoon.
  2. Drop batter by teaspoonful into boiling salted water.
  3. Cook about 10 minutes; drain; rinse with cold water.
  4. Drain well and add to Chicken Paprikash (Paprikas Csirke). Serve.
