With simple ingredients, smart shopping and bold flavor, Chef Erik shows how budget-friendly cooking can be hearty and satisfying. Total cost for ingredients at Grocery Outlet: $24.62. Meat-loaf ingredients totaled $17.05, so Chef Erik added some extra items: instant mashed potato mix, Brussels sprouts, bacon, Heath frozen pie. Simple Stuffing Meatloaf
Prep time: 13 minutes.
Cook time: 45 minutes.
Servings: 5.
Ingredients
2 pounds ground beef
6-ounce box stuffing (any variety). Chef Erik used the cornbread variety.
1 cup vegetable broth
2 eggs
12 ounce jar brown gravy
¼ cup ketchup
Fresh parsley, chopped (optional)
Salt and pepper to taste
1 teaspoon onion powder
Preparation
- Preheat the oven to 350 degrees.
- Pour box of stuffing into large bowl and add vegetable broth. Stir together and let sit for a few minutes until stuffing softens.
- Add eggs and ground beef. Season with salt, pepper and onion powder.
- Add ¼ cup of brown gravy; add the ketchup.
- Mix together until just evenly combined. Don’t overmix the meat or meatloaf will be too dense.
- Place meat mixture on a parchment paper-lined baking sheet. Form into a meatloaf shape.
- Bake for 45 minutes or until beef is cooked all the way through. Let rest for 5 minutes.
- Warm remaining gravy and to the top of the meatloaf. Spread out evenly.
- Sprinkle top with fresh chopped parsley, slice and serve warm. Enjoy!
Note: This simple stuffing meatloaf uses a box of stuffing instead of traditional breadcrumbs for a truly unique spin on a classic recipe.
