Mini Phyllo Quiches

Mini Phyllo Quiches | This recipe uses miniature phyllo shells to make mini-quiche appetizers.


INGREDIENTS

3 packages of Athena Phyllo Shells
6 eggs
3 slices smoked deli ham
3 green onions, finely chopped
1 cup shredded cheddar cheese
½ cup milk

PREPARATION

  • In a skillet, fry ham until crisp. Cool and chop into fine pieces.
  • Preheat oven to 350 degrees.
  • In a bowl, whisk together eggs, milk, cheese and crisp ham.
  • Place phyllo shells onto a foil-lined baking sheet. Sprinkle a small amount of green onion into each shell. Using a teaspoon, carefully fill each shell with the egg mixture.
  • Bake in oven until egg mixture has set, about 10 to 12 minutes.

Cool and remove to serving platter.
