Penn State Extension continues to offer live webinars on home food preservation throughout summer and fall.
Webinars cover a variety of topics, including pressure canning, freezing and other preservation techniques. From seasoned experts to beginners just starting out, participants can gain valuable tips and skills during the online programs.
With research-backed information, Penn State Extension aims to help dispel food preservation myths and unsafe practices and discuss practical tips to ensure a positive experience when preserving food at home.
Webinars are $5 each. Registration is required to receive the link to access the webinar. A link to the recorded webinar will be emailed to registrants within 10 business days after the live event.

Home Food Preservation: Jams and Jellies. For new and experienced home food preservers. Learn recommended methods for making and processing jam and jelly. The program will cover: the basics of water bath and atmospheric steam canning; techniques for making cooked and freezer jam and jelly; the types and uses of various pectin products to achieve a proper set; the essential functions of ingredients needed to produce a quality product; recipes for reduced-sugar and no-sugar-added jam and jelly; and basic troubleshooting for common jam and jelly issues. Home Food Preservation: Freezing. Participants will learn practical preparation techniques and recommended processing methods that allow seasonal foods to be preserved safely for enjoyment year-round. Covers pre-treatment steps, including blanching and the use of anti-darkening solutions, to maintain food quality. Preregistration is required. Virtual/live. 1 hour, 30 minutes. Home Food Preservation: Canning for Competition. Learn about the reasons behind current safety recommendations and see how best practices align with judging criteria used at local fairs and competitions. Learn the basics of atmospheric steam canning, including current USDA guidelines and safe methods for preserving high-acid foods such as tomatoes, fruits, jams and pickles. Home Food Preservation: Tomatoes and Salsa. For new and experienced home food preservers. Includes the various methods to preserve tomatoes and make salsas. Home Food Preservation: Pickling. Covers the basics of water bath and atmospheric steam canning for pickled products, including vegetables, fruits and relishes. Home Food Preservation: Fermented Pickles and Sauerkraut. Covers the basics of water bath and atmospheric steam canning for processing fermented products. Home Food Preservation: Charcuterie Accompaniments. For home food preservers at all levels.
