Potato Gnocchi with Pork Ragù
Ingredients
2 (16-ounce packages) potato gnocchi
1 teaspoon olive oil
2 cloves garlic, pressed
1 pound ground pork
1 tablespoon tomato paste
½ cup dry white wine
½ cup chicken stock

¼ cup fresh flat-leaf parsley, chopped
1 tablespoon fresh herb blend: rosemary, thyme, sage
grated Parmesan

Preparation
  1. Heat oil in a large skillet over medium-high heat. Add garlic and cook, stirring, until fragrant, 1 minute. Add pork and season with salt and pepper. Cook, breaking pork up into small pieces, until browned, 4 to 6 minutes (drain off excess fat, if necessary).
  2. Add tomato paste and cook, stirring, until pork starts to get crisp, 2 to 3 minutes. Add wine and simmer until mostly evaporated, 2 to 3 minutes. Add stock and bring to a simmer; remove from heat. Stir in fresh herb blend.
  3. Bring a large pot of salted water to a boil. Cook gnocchi until they begin to float to the surface, 2 to 4 minutes; drain.
  4. Toss gnocchi with sauce.
  5. Serve sprinkled with Parmesan.
